- 1 tbsp sesame oil
- 1 None onion, finely chopped
- 1 None red pepper, seeded, finely chopped
- 1 None green pepper, seeded, finely chopped
- 2 strips bacon, finely chopped
- 3 cups cooked brown rice (1/2 lb dry)
- 4 oz canned corn, drained
- 6 None spring onions, thinly sliced
- 1/4 cup light soy sauce
- 1/3 cup hoisin sauce
- None None cherry tomatoes, halved, to serve
- None None cilandro leaves, to serve
Method
- Heat oil in a large frying pan or wok over high heat. Saute onion, peppers and bacon for 3-4 mins. Add rice, corn, spring onion and sauces. Stir-fry for 2-3 mins, mixing well. Transfer to a bowl to cool. Top with cherry tomatoes and cilantro leaves and serve, or cover and chill until ready to serve.
