Ingredients
- 1 1/3 c. Minute rice
- 1/2 c. sugar
- 5 c. milk
- 2 tsp. vanilla
- 1/4 tsp. salt
- 1/2 tsp. nutmeg
- 2 Tbsp. butter
- 2 egg yolks plus 2 Tbsp. milk
Method
- Combine all ingredients except egg yolks and 2 tablespoons of milk and bring to a boil.
- Simmer gently 20 minutes over low heat, stirring frequently. Beat together egg yolks with 2 tablespoons milk and add to hot rice, stirring rapidly.
- Remove from heat and chill.
- Place waxed paper directly on pudding to prevent crusting.
