Ingredients

  • 1 1/3 c. Minute rice
  • 1/2 c. sugar
  • 5 c. milk
  • 2 tsp. vanilla
  • 1/4 tsp. salt
  • 1/2 tsp. nutmeg
  • 2 Tbsp. butter
  • 2 egg yolks plus 2 Tbsp. milk

Method

  • Combine all ingredients except egg yolks and 2 tablespoons of milk and bring to a boil.
  • Simmer gently 20 minutes over low heat, stirring frequently. Beat together egg yolks with 2 tablespoons milk and add to hot rice, stirring rapidly.
  • Remove from heat and chill.
  • Place waxed paper directly on pudding to prevent crusting.
