Ingredients
- 1/2 c. rice
- 5 eggs, beaten
- 3/4 c. sugar
- 1 tsp. vanilla
- 4 c. milk (whole)
- 1/4 tsp. cardamon
- salt
- melted butter
- cinnamon
Method
- Cook rice according to package directions.
- Scald milk.
- Let cool to lukewarm.
- Beat eggs, sugar, vanilla and cardamon.
- Add milk and cooked rice.
- Put in a 1 1/2-quart buttered casserole dish.
- Place in shallow pan of water and bake at 350°.
- After 20 to 25 minutes of baking, insert a fork and stir from sides without disturbing the top.
- Dot with melted butter and sprinkle with cinnamon.
- Continue baking 35 minutes, more or less, until custard is set.
- Makes 6 servings.
