Ingredients

  • 1/2 c. rice
  • 5 eggs, beaten
  • 3/4 c. sugar
  • 1 tsp. vanilla
  • 4 c. milk (whole)
  • 1/4 tsp. cardamon
  • salt
  • melted butter
  • cinnamon

Method

  • Cook rice according to package directions.
  • Scald milk.
  • Let cool to lukewarm.
  • Beat eggs, sugar, vanilla and cardamon.
  • Add milk and cooked rice.
  • Put in a 1 1/2-quart buttered casserole dish.
  • Place in shallow pan of water and bake at 350°.
  • After 20 to 25 minutes of baking, insert a fork and stir from sides without disturbing the top.
  • Dot with melted butter and sprinkle with cinnamon.
  • Continue baking 35 minutes, more or less, until custard is set.
  • Makes 6 servings.
