Ingredients

  • 3 eggs
  • 1 c. vegetable oil
  • 1 1/2 c. sugar
  • 2 tsp. vanilla
  • 2 c. flour
  • 1/4 tsp. baking powder
  • 2 tsp. baking soda
  • 3 tsp. ground cinnamon
  • 1 tsp. salt
  • 1 c. raisins & walnuts
  • 3 medium zucchini

Method

  • Beat eggs lightly in large bowl. Stir in oil, grated & well drained zucchini, sugar & vanilla. Sift flour, baking powder, soda, cinnamon & salt onto waxed paper. Stir in egg mixture until well blended, stir in raisins & nuts. Put into 2 well-greased loaf pans. Bake at 350° for 1 hour or until center springs back when touched with fingertip. Cool in pans on racks for 10 min. remove from pans and cool completely.
