Ingredients

  • 1 lb. ground beef or turkey
  • 1/2 c. chopped onion
  • 1 (30 oz.) jar prepared spaghetti sauce
  • 1 (15 oz.) container low-fat part skim Ricotta or cottage cheese
  • 2 c. (8 oz.) shredded low-fat part skim Mozzarella cheese
  • 2 egg whites
  • 3 c. cooked long grain rice
  • 1/4 c. grated Parmesan cheese

Method

  • Heat oven to 350°.
  • Spray a 9 x 13-inch pan with nonstick cooking spray.
  • In medium skillet, brown beef and onion; drain. Stir in spaghetti sauce; mix well.
  • In small bowl, combine Ricotta cheese, Mozzarella cheese and egg whites; mix well.
  • In the prepared pan, spread 1/3 of meat sauce, 1/2 of rice and 1/2 of Ricotta cheese mixture; repeat layers.
  • Spread remaining sauce on top; sprinkle with Parmesan cheese.
  • Bake at 350° for 30 to 35 minutes or until hot and bubbly.
  • Let stand for 10 minutes before serving.
  • Yields 8 servings.
