Ingredients
- 1 medium onion, diced
- 2 small garlic cloves, put through press
- 1/2 lb. margarine
- 2 c. dry uncooked rice
- 2 tsp. salt
- 3/4 tsp. curry powder (mix well in 1 c. cold water)
Method
- Melt margarine in frying pan.
- Add onion and garlic.
- Cook until tender, for at least 4 minutes.
- Add dry rice and cook for approximately 2 minutes more or until rice is coated well with margarine.
- Add the curry powder and water.
- Bake in preheated 400° oven for 25 minutes or until all the water is absorbed.
