Ingredients

  • 1 medium onion, diced
  • 2 small garlic cloves, put through press
  • 1/2 lb. margarine
  • 2 c. dry uncooked rice
  • 2 tsp. salt
  • 3/4 tsp. curry powder (mix well in 1 c. cold water)

Method

  • Melt margarine in frying pan.
  • Add onion and garlic.
  • Cook until tender, for at least 4 minutes.
  • Add dry rice and cook for approximately 2 minutes more or until rice is coated well with margarine.
  • Add the curry powder and water.
  • Bake in preheated 400° oven for 25 minutes or until all the water is absorbed.
