Ingredients
- 3/4 lb. Monterey Jack cheese
- 2 c. sour cream
- 1 can chopped green chiles
- 3 c. cooked rice
- 1/2 c. grated Cheddar cheese
- salt and pepper to taste
Method
- Cut Jack cheese into strips; mix sour cream and chiles.
- Butter a 1 1/2-quart casserole dish.
- Season rice with salt and pepper. Layer rice, sour cream mixture and cheese strips (in that order). Finish with rice on top.
- Bake at 350° for 30 minutes.
- Sprinkle with Cheddar cheese and allow to melt.
