Ingredients
- 1/4 c. butter
- 3/4 c. milk
- 1/2 tsp. salt
- 1 c. rhubarb, cut in 3/4-inch lengths
- 2 eggs
- 3/4 c. flour
- 1 c. brown sugar
- 1/3 c. butter
Method
- Heat 1/4 cup butter in a 1-quart dish in 425° oven until it bubbles.
- Meanwhile, beat eggs with milk, then gradually beat in flour and salt.
- Pour batter into bubbling butter.
- Drop rhubarb into center of batter.
- Do not mix.
- Bake in 425° oven for 25 minutes or until crust is brown.
