Ingredients
- 3 egg whites, beaten
- 3 egg yolks
- 1 c. sugar
- 1 Tbsp. melted butter
- 2 Tbsp. heaping flour
- 1 c. milk
- 1 tsp. lemon juice
- 1 c. cut up rhubarb
- 1 unbaked pie shell
Method
- Beat egg whites until stiff, save for later.
- Beat egg yolks and sugar together.
- Add melted butter and flour.
- Stir in milk and lemon juice.
- Cut rhubarb and place in the bottom of unbaked pie shell. Fold egg whites that have been beaten stiff into above mixture.
- Pour over rhubarb.
- Bake at 375° for 10 minutes and then at 350° for 25 minutes more.
- Use a 9-inch pan.
