Ingredients

  • 3 egg whites, beaten
  • 3 egg yolks
  • 1 c. sugar
  • 1 Tbsp. melted butter
  • 2 Tbsp. heaping flour
  • 1 c. milk
  • 1 tsp. lemon juice
  • 1 c. cut up rhubarb
  • 1 unbaked pie shell

Method

  • Beat egg whites until stiff, save for later.
  • Beat egg yolks and sugar together.
  • Add melted butter and flour.
  • Stir in milk and lemon juice.
  • Cut rhubarb and place in the bottom of unbaked pie shell. Fold egg whites that have been beaten stiff into above mixture.
  • Pour over rhubarb.
  • Bake at 375° for 10 minutes and then at 350° for 25 minutes more.
  • Use a 9-inch pan.
