Ingredients

  • 2 c. flour
  • 1 Tbsp. baking powder
  • 1/3 c. sugar
  • 1/4 c. margarine
  • 1 egg
  • milk
  • 1 tsp. vanilla
  • 6 c. sliced rhubarb
  • 1 (3 oz.) pkg. raspberry or strawberry jello
  • 2 c. sugar
  • 1/2 c. flour
  • 1/4 c. margarine

Method

  • Combine flour, baking powder, sugar, and margarine.
  • Cut in shortening as for pie crust.
  • Place egg in 1 cup measuring cup. Add milk to make 1 cup, add vanilla.
  • Stir until well blended. Spread in prepared pan.
  • Add rhubarb.
  • Spread over short cake. Sprinkle jello on top of rhubarb.
  • Combine sugar and flour in bowl.
  • Cut in margarine and sprinkle on top of the above.
  • Bake 375° or 350° for glass pan for 40 minutes.
