Ingredients
- 2 c. flour
- 1 Tbsp. baking powder
- 1/3 c. sugar
- 1/4 c. margarine
- 1 egg
- milk
- 1 tsp. vanilla
- 6 c. sliced rhubarb
- 1 (3 oz.) pkg. raspberry or strawberry jello
- 2 c. sugar
- 1/2 c. flour
- 1/4 c. margarine
Method
- Combine flour, baking powder, sugar, and margarine.
- Cut in shortening as for pie crust.
- Place egg in 1 cup measuring cup. Add milk to make 1 cup, add vanilla.
- Stir until well blended. Spread in prepared pan.
- Add rhubarb.
- Spread over short cake. Sprinkle jello on top of rhubarb.
- Combine sugar and flour in bowl.
- Cut in margarine and sprinkle on top of the above.
- Bake 375° or 350° for glass pan for 40 minutes.
