Ingredients
- 4 eggs
- 2 c. sugar
- chunks of butter (1/2 stick)
- 4 Tbsp. flour
- 4 Tbsp. lemon juice
- 4 c. diced rhubarb
- 1 (9-inch) unbaked pie shell
Method
- Line a 9-inch pie pan with pastry.
- In a bowl, combine eggs, sugar, butter, flour, lemon juice and rhubarb.
- Blend thoroughly. Pour into pie shell.
- Bake in a 400° oven for 50 minutes, or until done.
