Ingredients
- 2 c. diced rhubarb
- 1/2 c. sugar
- 1/2 c. shortening
- 1 1/2 c. sugar
- 1 egg
- 1 c. buttermilk
- 1 tsp. soda
- 1 tsp. vanilla
- 2 c. flour (unsifted)
- 1 tsp. cinnamon
- dash of salt
Method
- Mix rhubarb and 1/2 cup sugar; let stand.
- Cream together shortening and 1 1/2 cups sugar.
- Add egg; beat.
- Put soda and vanilla in buttermilk.
- Sift together flour, cinnamon and salt. Add dry ingredients alternately with milk, starting and ending with dry ingredients.
- Stir in rhubarb.
- Bake in greased 9 x 13-inch pan at 350° for 45 minutes.
- Serve with whipped cream topping.
