Ingredients

  • 2 c. diced rhubarb
  • 1/2 c. sugar
  • 1/2 c. shortening
  • 1 1/2 c. sugar
  • 1 egg
  • 1 c. buttermilk
  • 1 tsp. soda
  • 1 tsp. vanilla
  • 2 c. flour (unsifted)
  • 1 tsp. cinnamon
  • dash of salt

Method

  • Mix rhubarb and 1/2 cup sugar; let stand.
  • Cream together shortening and 1 1/2 cups sugar.
  • Add egg; beat.
  • Put soda and vanilla in buttermilk.
  • Sift together flour, cinnamon and salt. Add dry ingredients alternately with milk, starting and ending with dry ingredients.
  • Stir in rhubarb.
  • Bake in greased 9 x 13-inch pan at 350° for 45 minutes.
  • Serve with whipped cream topping.
