Ingredients

  • 1 (16 oz.) can sauerkraut
  • 1 (12 oz.) can corned beef, broken in small pieces
  • 2 c. shredded Swiss cheese
  • 1/2 c. mayonnaise
  • 1/4 c. Thousand Island dressing
  • 2 medium tomatoes, sliced
  • 2 Tbsp. oleo
  • 1/4 c. bread crumbs

Method

  • Place sauerkraut in 1 1/2-quart glass casserole.
  • Top with corned beef, then cheese.
  • Combine mayonnaise and Thousand Island dressing.
  • Spread over cheese.
  • Top with tomatoes.
  • Melt oleo and add bread crumbs.
  • Sprinkle on top.
  • Microwave for 15 to 17 minutes on High or until heated through.
  • Let stand 5 minutes. Makes about 6 servings.
