Ingredients
- 2 c. flour
- 1/2 tsp. salt
- 1 c. sugar
- 1 egg
- 2 Tbsp. shortening
- 1 c. blueberries, drained
- 3 Tbsp. juice (orange or lemon)
- 3/4 c. boiling water
- 1 1/2 tsp. soda
- 1 1/2 tsp. baking powder
- 1 c. cranberries
Method
- Combine dry ingredients.
- Mix in hot water and juices.
- Add egg and shortening, then fold in berries (cranberries should be coarsely chopped).
- Put into greased loaf pan.
- Bake at 325° for 1 hour.
