Ingredients

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1/8 teaspoon ground mace
  • Freshly milled white pepper
  • 1 cup day-old white bread, crusts removed, and bread torn into small pieces (about 3 slices)
  • 1/2 cup country cured ham, cut into julienne (about 3 ounces)

Method

  • In a small saucepan, melt the butter.
  • Remove from the heat and whisk in the flour.
  • Return to the heat, add the milk, mace, and pepper to taste and whisk constantly until the sauce thickens and is velvety-smooth.
  • Fold in the bread and ham, and pour into a heated sauceboat.
