Ingredients
- 24 sweet red peppers (about 8 c.)
- 7 medium onions
- 3 c. sugar
- 3 c. vinegar
- 2 Tbsp. salt
Method
- Cut peppers and onions in half lengthwise, slice thinly.
- Or grind peppers and onions, reserving juices.
- In saucepan, combine juices, peppers, onions, sugar, vinegar and salt.
- Simmer for 30 minutes.
- Pour into hot, clean jars.
- Seal.
- Makes 10 half-pints.
