Ingredients

  • 7 lb. large cucumbers, peeled and seeded
  • 2 c. vinegar
  • 1 oz. red food coloring
  • 1 tsp. alum
  • 1 c. lime
  • 7 c. sugar
  • 8 sticks cinnamon
  • 10 oz. red hot candy
  • water

Method

  • Soak cucumbers in lime and 1 gallon water for 24 hours; drain and rinse.
  • Cover with ice water for 3 hours; drain.
  • Mix 2 cups vinegar, red food coloring and alum with water to cover.
  • Simmer for 2 hours; drain.
  • Mix 2 cups vinegar, 2 cups water, sugar, cinnamon sticks and red hot candy.
  • Pour over rings and let stand for 24 hours.
  • Drain and save liquid.
  • Bring liquid to a boil. Place pickle rings in jar.
  • Pour boiling syrup over pickles and seal.
