Ingredients
- 7 lb. large cucumbers, peeled and seeded
- 2 c. vinegar
- 1 oz. red food coloring
- 1 tsp. alum
- 1 c. lime
- 7 c. sugar
- 8 sticks cinnamon
- 10 oz. red hot candy
- water
Method
- Soak cucumbers in lime and 1 gallon water for 24 hours; drain and rinse.
- Cover with ice water for 3 hours; drain.
- Mix 2 cups vinegar, red food coloring and alum with water to cover.
- Simmer for 2 hours; drain.
- Mix 2 cups vinegar, 2 cups water, sugar, cinnamon sticks and red hot candy.
- Pour over rings and let stand for 24 hours.
- Drain and save liquid.
- Bring liquid to a boil. Place pickle rings in jar.
- Pour boiling syrup over pickles and seal.
