Ingredients
- 1 lb. red kidney beans
- 1/2 lb. ham or meat seasoning
- 8 c. water
- 1 onion, chopped
- 1 clove garlic, chopped
- 2 Tbsp. celery, chopped
- 2 Tbsp. parsley, chopped
- 1 large bay leaf
- salt to taste
- pepper to taste
- rice, cooked
Method
- Rinse and sort beans.
- Render meat in skillet.
- Remove meat and place on side.
- Saute in fat in skillet, onion, garlic, parsley and celery.
- Add these with salt and pepper to beans. Cook over low heat for 1 1/2 hours.
- To make creamy, cook for 3 to 4 hours.
- Serve over rice.
