Ingredients

  • 1 lb. red kidney beans
  • 1/2 lb. ham or meat seasoning
  • 8 c. water
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 2 Tbsp. celery, chopped
  • 2 Tbsp. parsley, chopped
  • 1 large bay leaf
  • salt to taste
  • pepper to taste
  • rice, cooked

Method

  • Rinse and sort beans.
  • Render meat in skillet.
  • Remove meat and place on side.
  • Saute in fat in skillet, onion, garlic, parsley and celery.
  • Add these with salt and pepper to beans. Cook over low heat for 1 1/2 hours.
  • To make creamy, cook for 3 to 4 hours.
  • Serve over rice.
