- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 small green pepper, finely chopped
- 1 celery rib, thinly sliced
- 3 garlic cloves, minced
- 1 12 teaspoons mccormick cajun seasoning
- 12 teaspoon dried oregano
- 12 teaspoon dried thyme
- 12 lb dried red kidney beans, rinsed and picked over
- 1 large chicken bouillon cube
- 3 cups water
- 12 lb light kielbasa, cut into 1/4-inch half moons
- 14 teaspoon black pepper
- 3 cups cooked white rice
Method
- Heat oil in a medium-size skillet over medium-heat.
- Add onion, green pepper and celery.
- Cook, stirring, for 7 minutes.
- Add garlic; cook 1 minute.
- Scrape contents of skillet into slow cooker.
- Add cajun seasoning, oregano, thyme, beans, bouillion cube and water.
- Cook for 3 1/2 hours on high for 5 hours on low or until beans are soft.
- Stir in kielbasa and black pepper.
- Cook until heated through.
- Serve over rice.
