Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 small green pepper, finely chopped
  • 1 celery rib, thinly sliced
  • 3 garlic cloves, minced
  • 1 12 teaspoons mccormick cajun seasoning
  • 12 teaspoon dried oregano
  • 12 teaspoon dried thyme
  • 12 lb dried red kidney beans, rinsed and picked over
  • 1 large chicken bouillon cube
  • 3 cups water
  • 12 lb light kielbasa, cut into 1/4-inch half moons
  • 14 teaspoon black pepper
  • 3 cups cooked white rice

Method

  • Heat oil in a medium-size skillet over medium-heat.
  • Add onion, green pepper and celery.
  • Cook, stirring, for 7 minutes.
  • Add garlic; cook 1 minute.
  • Scrape contents of skillet into slow cooker.
  • Add cajun seasoning, oregano, thyme, beans, bouillion cube and water.
  • Cook for 3 1/2 hours on high for 5 hours on low or until beans are soft.
  • Stir in kielbasa and black pepper.
  • Cook until heated through.
  • Serve over rice.
