Ingredients

  • 1/2 c. butter
  • 1 c. brown sugar
  • 1 small can pineapple, drained
  • 1 c. white sugar
  • 1 c. self-rising flour
  • 3 egg yolks
  • 5 Tbsp. pineapple juice or water
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • 3 egg whites

Method

  • Put butter, brown sugar and pineapple to melt in an iron frying pan.
  • Mix white sugar, flour, egg yolks, vanilla and baking powder in a bowl with pineapple juice.
  • Beat egg whites until stiff and fold into batter. Pour batter over pineapple in skillet. Bake at 375° for 45 minutes.
