Ingredients
- 1 c. red beans
- 1 c. cooked tomatoes
- 1/2 tsp. dry mustard
- 1/8 tsp. pepper
- 6 slices bacon
- 1 bay leaf
- 1/2 Tbsp. molasses
- 1/2 tsp. salt
- 1/2 c. grated American cheese or your choice of cheese
Method
- Wash, soak and cook beans until tender.
- Remove bay leaf. Drain beans.
- Thoroughly drain tomatoes and cut into spoon size pieces.
- Mix and cook all ingredients, except bacon and cheese. Put mixture into casserole and top, in order, with cheese and bacon.
- Bake at 350° for 15 to 20 minutes.
- Place casserole under broiler about 5 minutes or until evenly crisped.
- Makes 5 (5 ounce) servings.
