Ingredients

  • 1 c. red beans
  • 1 c. cooked tomatoes
  • 1/2 tsp. dry mustard
  • 1/8 tsp. pepper
  • 6 slices bacon
  • 1 bay leaf
  • 1/2 Tbsp. molasses
  • 1/2 tsp. salt
  • 1/2 c. grated American cheese or your choice of cheese

Method

  • Wash, soak and cook beans until tender.
  • Remove bay leaf. Drain beans.
  • Thoroughly drain tomatoes and cut into spoon size pieces.
  • Mix and cook all ingredients, except bacon and cheese. Put mixture into casserole and top, in order, with cheese and bacon.
  • Bake at 350° for 15 to 20 minutes.
  • Place casserole under broiler about 5 minutes or until evenly crisped.
  • Makes 5 (5 ounce) servings.
