Ingredients

  • 3 lbs ground beef
  • 3 eggs
  • 12 teaspoon ground pepper
  • 1 teaspoon salt
  • 2 teaspoons garlic powder
  • 2 teaspoons parsley
  • 6 ounces frozen chopped spinach (drained)
  • 8 ounces black olives (chopped)
  • 1 cup goat cheese
  • 1 cup seasoned bread crumbs
  • 2 cups chicken broth
  • 10 ounces Simply Potatoes Shredded Hash Browns
  • 14 cup ketchup
  • 6 slices cooked bacon

Method

  • Place the ground beef in a large bowl and add the eggs, pepper, salt, garlic powder, parsley, flavored bread crumbs and chicken broth.
  • Mix together well.
  • Squeeze out all liquid from the chopped spinach.
  • In a separate bowl combine the shredded potatoes with the chopped black olives and the drained chopped spinach.
  • Mold half of the ground beef mixture into a ball and flatten it down and place in a roasting pan.
  • Add the shredded potatoes, black olive and spinach mixture on top of the meat.
  • Then place the goat cheese on top of that layer.
  • Take the remaining ground beef and cover up the top of the loaf.
  • Drizzle ketchup over the top of the loaf and place the bacon strips over the ketchup.
  • Bake @ 375 degrees for 1 1/2 hrs or until done.
