Ingredients
- 1 lb. eggplant, diced
- 4 oz. onion, chopped
- 2 garlic cloves, crushed
- 1/2 c. olive oil
- 2 green peppers, chopped
- 1 lb. tomatoes, skinned and diced
- salt and pepper to taste
- 8 oz. zucchini, diced
Method
- Heat the oil in a large frying pan.
- Add the onion and fry until golden.
- Add garlic and peppers.
- Add eggplant, zucchini and tomatoes.
- Fry vegetables gently, then cover and simmer for 30 minutes.
