Ingredients
- 1 eggplant
- 1 zucchini
- 6 tomatoes
- 1 chopped onion
- 4 Tbsp. olive oil
- 1 minced clove garlic
- 1 Tbsp. chopped parsley
- 1 bay leaf
- salt and pepper to taste
Method
- Peel and cube eggplant and zucchini.
- Boil in water 10 minutes; drain.
- Peel and cut tomatoes.
- Brown onion in olive oil. Add vegetables, garlic, parsley, bay leaf, salt and pepper.
- Cook 10 minutes and move to shallow baking dish.
- Sprinkle with 1/2 cup Italian cheese and brown.
