Ingredients

  • 3/4 c. fresh raspberries
  • 2 eggs, beaten
  • 1 c. milk
  • 1 tsp. vanilla
  • 1 1/2 c. flour
  • 3/4 c. sugar
  • 3/4 c. cornmeal
  • 1 Tbsp. baking powder
  • 1/4 tsp. salt
  • 4 Tbsp. butter, melted
  • 1 tsp. grated orange peel

Method

  • Gently rinse berries; pat dry and set aside.
  • In a mixing bowl, combine eggs, milk and vanilla.
  • In a separate bowl, combine flour, sugar, cornmeal, baking powder, salt and grated orange peel.
  • Stir egg-milk mixture into the flour mixture, along with the melted butter.
  • (Stir just enough to blend ingredients; do not overmix.)
