Ingredients

  • 1 large onion
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can Ro-Tel tomatoes
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. oregano
  • 1 pkg. tortilla chips
  • 1 lb. grated Cheddar cheese
  • 1 chicken, cooked, boned and chopped
  • butter or oleo (for sauteing)

Method

  • Saute onion in a little butter or oleo.
  • Add soups, tomatoes and seasonings.
  • Simmer 15 minutes.
  • Cover the bottom of a 9 x 13 x 2-inch baking pan with broken tortilla chips.
  • Add chicken to soup mixture and pour mixture over chips.
  • Cover with grated cheese. Bake at 350° for 30 minutes.
