- 1 large onion
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can Ro-Tel tomatoes
- 1 tsp. chili powder
- 1 tsp. cumin
- 1 tsp. oregano
- 1 pkg. tortilla chips
- 1 lb. grated Cheddar cheese
- 1 chicken, cooked, boned and chopped
- butter or oleo (for sauteing)
Method
- Saute onion in a little butter or oleo.
- Add soups, tomatoes and seasonings.
- Simmer 15 minutes.
- Cover the bottom of a 9 x 13 x 2-inch baking pan with broken tortilla chips.
- Add chicken to soup mixture and pour mixture over chips.
- Cover with grated cheese. Bake at 350° for 30 minutes.
