Ingredients
- 1/2 c. soft shortening
- 3/4 c. sugar
- 1 egg
- 1 Tbsp. milk
- 1/2 tsp. lemon extract (or vanilla if preferred)
- 1 1/4 c. flour
- 3/4 tsp. cream of tartar
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- 1/2 c. coarsely chopped raisins
Method
- Mix together shortening, sugar and egg until thoroughly blended.
- Stir in milk and lemon extract.
- Sift together flour, cream of tartar, baking soda and salt.
- Thoroughly mix together the wet and dry ingredients until they are well blended.
- Stir in raisins.
- Roll into balls about the size of a small walnut.
- Place balls about 3 inches apart on an ungreased baking sheet.
- Flatten each with a fork dipped in flour making a crisscross pattern. Bake at 400° for 8 to 10 minutes.
- Makes 3 dozen.
