Ingredients

  • 1/2 c. soft shortening
  • 3/4 c. sugar
  • 1 egg
  • 1 Tbsp. milk
  • 1/2 tsp. lemon extract (or vanilla if preferred)
  • 1 1/4 c. flour
  • 3/4 tsp. cream of tartar
  • 3/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 c. coarsely chopped raisins

Method

  • Mix together shortening, sugar and egg until thoroughly blended.
  • Stir in milk and lemon extract.
  • Sift together flour, cream of tartar, baking soda and salt.
  • Thoroughly mix together the wet and dry ingredients until they are well blended.
  • Stir in raisins.
  • Roll into balls about the size of a small walnut.
  • Place balls about 3 inches apart on an ungreased baking sheet.
  • Flatten each with a fork dipped in flour making a crisscross pattern. Bake at 400° for 8 to 10 minutes.
  • Makes 3 dozen.
