Ingredients

  • 1/2 c. raisins
  • 1 unbaked 9-inch pie shell
  • 1 (8 oz.) jar applesauce
  • 1/2 c. brown sugar, packed
  • 1 1/2 tsp. pumpkin pie spice
  • dash of salt
  • 1 (15 oz.) can pumpkin
  • 2 eggs, beaten
  • 3/4 c. evaporated milk

Method

  • Sprinkle raisins in bottom of pie shell.
  • Add layer of applesauce over the raisins.
  • In mixing bowl, combine spices, sugar and salt.
  • Add pumpkin, milk and beaten eggs.
  • Put mixture over applesauce in the pie shell.
  • Bake at 400° in lower level of oven 45 minutes or until knife inserted in center comes out clean. Serve with ice cream if desired.
