Ingredients

  • 2 cups Water
  • 1 cup Quinoa
  • 2 whole Tomatoes, Diced
  • 3 Tablespoons Mint, Chopped
  • 1 cup Parsley, Chopped
  • 1/2 cups Olive Oil
  • 1/2 cups Lemon Juice
  • Salt And Pepper, to taste

Method

  • In a medium pot, add 2 cups of water and 1 cup of quinoa. Bring to a boil, then reduce heat and simmer for 15 minutes. Then remove quinoa from the pot and fluff with a fork. Next, in a large bowl, add cooked quinoa, diced tomatoes, chopped mint and parsley. Mix with a large fork. Add olive oil and lemon juice, and salt and pepper to taste. Toss again. Serve refrigerated.
