Ingredients

  • 1/4 cup Collard or Turnip greens, rinsed and chopped
  • 1 Tomato, diced
  • 1/3 Zucchini or Cucumber
  • 3 tbsp Lemon or Lime juice
  • 1/4 small purple or yellow onion, diced
  • 1/3 cup Quinoa, cooked
  • 1 Salt and pepper to taste

Method

  • Cook collard greens and onions by simmering in shallow water for about 10 minutes
  • Chop zucchini and halve the slices
  • Combine all other ingredients and toss
  • Sprinkle with salt and pepper as desired
