Ingredients

  • 3 lb. potatoes
  • 1/2 lb. bacon
  • 1/2 c. sugar (may substitute Equal)
  • 1/4 c. water
  • 1/2 c. green pepper, chopped
  • 1/4 c. pimentos (optional)
  • 2 tsp. salt
  • pepper to taste
  • 1/2 c. vinegar
  • 1 medium chopped onion
  • 1/2 to 1 c. chopped celery

Method

  • Wash and cook potatoes in water until tender.
  • Drain, cool and cube.
  • In heavy saucepan, brown diced bacon.
  • Add vinegar, water, sugar, salt and pepper.
  • Simmer on medium heat.
  • Set aside.
  • In roaster, add cubed potatoes, celery, onion, green pepper, pimentos, salt and pepper.
  • Pour bacon mixture over potatoes and bake, covered, at 350° for 35 to 40 minutes or until heated thoroughly.
