Ingredients
- 3 lb. potatoes
- 1/2 lb. bacon
- 1/2 c. sugar (may substitute Equal)
- 1/4 c. water
- 1/2 c. green pepper, chopped
- 1/4 c. pimentos (optional)
- 2 tsp. salt
- pepper to taste
- 1/2 c. vinegar
- 1 medium chopped onion
- 1/2 to 1 c. chopped celery
Method
- Wash and cook potatoes in water until tender.
- Drain, cool and cube.
- In heavy saucepan, brown diced bacon.
- Add vinegar, water, sugar, salt and pepper.
- Simmer on medium heat.
- Set aside.
- In roaster, add cubed potatoes, celery, onion, green pepper, pimentos, salt and pepper.
- Pour bacon mixture over potatoes and bake, covered, at 350° for 35 to 40 minutes or until heated thoroughly.
