Ingredients

  • 2 slices bacon
  • 1 (16 oz.) can mixed vegetables (undrained)
  • 1 (16 oz.) can tomatoes (undrained)
  • 1/2 Tbsp. instant beef bouillon
  • 1/8 tsp. garlic powder
  • 2 Tbsp. grated Parmesan cheese

Method

  • Place bacon in single layer in a 1 1/2-quart microwave-safe casserole.
  • Cover with paper towel.
  • Microwave on High for 2 to 3 minutes or until crisp; set aside.
  • Preserve 1 tablespoon of drippings; discard remainder.
  • Add vegetables, tomatoes, cut into small pieces, onion, bouillon and garlic powder to drippings. Cover with casserole lid.
  • Microwave on High 9 to 11 minutes or until steaming hot and flavors are blended.
  • Crumble bacon and add to soup.
  • Sprinkle cheese over individual bowls of soup.
  • Makes about 4 servings (125 calories).
