Ingredients
- 3 qt. peeled and chopped tomatoes
- 3 c. celery, chopped
- 2 c. onions, chopped
- 1 c. green pepper, chopped
- 1/4 c. salt
- 2 c. sugar
- 1/4 c. brown sugar
- 1 1/2 tsp. pepper
- 1 1/2 tsp. mixed pickling spices
- 1 c. white vinegar
Method
- Combine vegetables and salt; let stand overnight. Drain well but do not press. Add other ingredients (spices tied in bag). Bring to boil; reduce heat and simmer 10 minutes or longer if wanted thicker. Put in pint jars and process 10 minutes. Makes 5 pints.
