Ingredients

  • 3 qt. peeled and chopped tomatoes
  • 3 c. celery, chopped
  • 2 c. onions, chopped
  • 1 c. green pepper, chopped
  • 1/4 c. salt
  • 2 c. sugar
  • 1/4 c. brown sugar
  • 1 1/2 tsp. pepper
  • 1 1/2 tsp. mixed pickling spices
  • 1 c. white vinegar

Method

  • Combine vegetables and salt; let stand overnight. Drain well but do not press. Add other ingredients (spices tied in bag). Bring to boil; reduce heat and simmer 10 minutes or longer if wanted thicker. Put in pint jars and process 10 minutes. Makes 5 pints.
