Ingredients

  • 8 English muffins, or as many as you want per person
  • 8 slice of mozzarella cheese
  • 1/3 cup your favorite meat. Peperoni slices cut into quarters, ground Italian sausage etc.
  • 1/2 cup grated parmesan
  • 1 cup pizza sauce
  • 1 14 oz. can of tomato sauce
  • 2 tsp of minced garlic
  • 2 tsp of Italian seasoning
  • 1 tsp Red wine vinegar
  • 1 Salt and pepper to taste
  • 1 Simmer on low - med heat till thickened and reduced
  • 1/3 cup mushrooms sliced small
  • 1/3 cup thin sliced red onion
  • 1/3 cup diced bell peppers
  • 1/3 cup sliced fresh tomatoes
  • 1 Try artichokes, kalamata olives and fetta cheese for a Mediterranean style veggie
  • 8 oz if fresh mozzarella, sliced
  • 1 large heirloom tomato or 2 small-med. sliced
  • 4 fresh basil leaves, julienned
  • 1 Broil with mozzarella and tomato (see below) then top with fresh basil before serving

Method

  • Half the English muffins and toast them lightly
  • Spread each muffin with sauce and a slice of cheese
  • Add your favorite toppings
  • Place muffins on baking sheet and broil till cheese is melted and bubbly, about 1-2 minutes
  • Enjoy!
