Ingredients

  • 1 c. warm water
  • 1 Tbsp. honey
  • 2 pkg. yeast
  • 3 c. hot water
  • 1/3 c. honey
  • 4 Tbsp. oil
  • 1 Tbsp. salt
  • 4 c. whole wheat flour
  • approximately 5 c. whole wheat flour, warmed in 250~ oven

Method

  • Combine the first 3 ingredients in a small bowl and let stand for about 10 minutes.
  • In a large separate bowl, mix the hot water, honey, oil, salt and 4 cups whole wheat flour in order given.
  • Cool to lukewarm and add yeast mixture.
  • Beat thoroughly in electric mixer or vigorously by hand.
  • Let this rise in a warm place 15 minutes.
  • Add enough of the 5 cups of warmed flour to make soft dough which can be handled.
  • Knead 5 minutes.
  • Throw the mass of dough with force onto the bread board several times.
  • Put loaves into well-greased pans and allow to sit for 12 minutes.
  • Bake at 250° for 15 minutes.
  • Increase heat to 350° and finish baking, about 45 minutes.
  • Yields 3 loaves.
