Ingredients
- unbaked 9-inch pie shell
- 1 egg white
- 1/4 lb. bacon
- 1/2 c. diced Swiss cheese
- 2 c. milk or cream
- 1/4 tsp. salt
- 1/8 tsp. white pepper
- grating of nutmeg
- 1 tsp. chopped chives
Method
- Preheat oven to 375°.
- Brush pie shell with egg white.
- Prick well.
- Chop bacon into 1-inch lengths.
- Fry and drain well.
- Scald milk to hasten cooking.
- Cool slightly.
- Beat together milk, eggs, spices and chives.
- Sprinkle bacon and cheese in bottom of pie shell.
- Pour custard mixture over bacon and cheese.
- Bake 35 to 40 minutes or until top is golden brown.
