Ingredients

  • unbaked 9-inch pie shell
  • 1 egg white
  • 1/4 lb. bacon
  • 1/2 c. diced Swiss cheese
  • 2 c. milk or cream
  • 1/4 tsp. salt
  • 1/8 tsp. white pepper
  • grating of nutmeg
  • 1 tsp. chopped chives

Method

  • Preheat oven to 375°.
  • Brush pie shell with egg white.
  • Prick well.
  • Chop bacon into 1-inch lengths.
  • Fry and drain well.
  • Scald milk to hasten cooking.
  • Cool slightly.
  • Beat together milk, eggs, spices and chives.
  • Sprinkle bacon and cheese in bottom of pie shell.
  • Pour custard mixture over bacon and cheese.
  • Bake 35 to 40 minutes or until top is golden brown.
