Ingredients
- unbaked 9-inch pie shell
- 6 slices bacon
- 3/4 c. chopped onion
- 1 1/4 c. grated Swiss cheese
- 1/4 c. Parmesan cheese
- 3 eggs, beaten
- 1 1/2 c. light cream
- 1/2 tsp. salt
- 1/4 tsp. pepper
Method
- Cook bacon until crisp.
- Remove from skillet and crumble. Drain off fat.
- Return 1 tablespoon fat to skillet.
- Add onion and cook until tender, but not browned.
- Place bacon, onion and cheese in pie shell.
- Blend together eggs, cream, salt and pepper.
- Pour over mixture in pie shell.
- Bake in oven at 375° until mixture is firm and light brown, about 45 minutes.
