Ingredients

  • unbaked 9-inch pie shell
  • 6 slices bacon
  • 3/4 c. chopped onion
  • 1 1/4 c. grated Swiss cheese
  • 1/4 c. Parmesan cheese
  • 3 eggs, beaten
  • 1 1/2 c. light cream
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Method

  • Cook bacon until crisp.
  • Remove from skillet and crumble. Drain off fat.
  • Return 1 tablespoon fat to skillet.
  • Add onion and cook until tender, but not browned.
  • Place bacon, onion and cheese in pie shell.
  • Blend together eggs, cream, salt and pepper.
  • Pour over mixture in pie shell.
  • Bake in oven at 375° until mixture is firm and light brown, about 45 minutes.
