Ingredients

  • 1 sm. pkg. orange Jello
  • 3/4 c. boiling water
  • 2 c. sm. marshmallows
  • 3/4 c. chilled pineapple juice
  • 1 (8 ounce.) can crushed pineapple, liquid removed
  • 1 c. finely shredded carrots
  • 1 c. whipping cream, whipped

Method

  • In medium saucepan, dissolve gelatin in boiling water; add in marshmallows.
  • Over low heat, cook and stir till marshmallows heat.
  • Remove from heat; pour into medium mixing bowl.
  • Add in pineapple juice; mix well.
  • Refrigeratefor 1 hour or possibly till slightly thickened.
  • Add in pineapple and carrot; mix well.
  • Mix in whipped cream.
