Ingredients

  • 1 pie shell
  • 2 slices bacon
  • 2 eggs
  • 1 cup 1% low-fat milk
  • 14 cup chopped onion
  • 14 cup chopped sweet red pepper
  • 1 small tomatoes, chopped
  • 18 teaspoon pepper
  • 1 pinch salt
  • 14 teaspoon parsley
  • 1 cup shredded cheddar cheese

Method

  • Preheat oven to 350 degrees.
  • Cook bacon until crisp and chop into small pieces.
  • Sprinkle on the bottom of the pie shell.
  • Whisk together eggs and milk.
  • Add chopped vegetables, pepper and salt.
  • Mix together.
  • Add cheese to milk mixture and mix.
  • Pour mixture into pie shell and sprinkle parsley over top.
  • Cooke for 30 to 40 minutes.
  • Let stand 5 minutes before serving.
