Ingredients
- 8 quail
- salt and pepper to taste
- 2 Tbsp. flour
- 5 Tbsp. butter
- 1/4 c. white wine
- 1 c. chicken stock
- 1 c. small white grapes
- 4 Tbsp. sliced almonds
Method
- Salt and pepper quail; roll in flour.
- Saute in butter until browned.
- Add wine and stock.
- Simmer 15 minutes, turning several times.
- Add grapes and heat just until the grapes are warmed. Place quail on a hot plate; spoon sauce over.
- Arrange grapes around quail.
- Sprinkle with almonds that have been browned in a little butter.
