Ingredients
- 1 lb. can pumpkin (2 c.)
- 1 c. sugar
- 1 tsp. salt
- 1 tsp. ground ginger
- 36 or more crumbled gingersnaps
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/2 gal. vanilla ice cream, softened or yogurt
Method
- Combine pumpkin, sugar, salt, ginger, cinnamon and nutmeg. In a chilled bowl, fold pumpkin mixture into ice cream.
