Ingredients

  • 1 c. margarine
  • 1 c. sugar
  • 1 c. brown sugar
  • 2 c. pumpkin
  • 2 3/4 c. flour (plain)
  • 4 eggs
  • 1 tsp. salt
  • 1/2 tsp. ginger
  • 1/4 tsp. allspice
  • 1/2 c. raisins
  • 1/2 c. nuts, chopped
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. cinnamon

Method

  • Cream margarine and sugar.
  • Add eggs one at a time.
  • (Beat after each one.)
  • Blend in pumpkin.
  • Add dry ingredients gradually.
  • Stir in raisins and nuts.
  • Butter and flour a 1 pound empty coffee can and pour in batter.
  • Bake for 1 hour at 350°. Remove cake when cool.
  • Sprinkle with confectioners sugar when cool.
