- 1 c. margarine
- 1 c. sugar
- 1 c. brown sugar
- 2 c. pumpkin
- 2 3/4 c. flour (plain)
- 4 eggs
- 1 tsp. salt
- 1/2 tsp. ginger
- 1/4 tsp. allspice
- 1/2 c. raisins
- 1/2 c. nuts, chopped
- 1 tsp. baking powder
- 1 tsp. baking soda
- 2 tsp. cinnamon
Method
- Cream margarine and sugar.
- Add eggs one at a time.
- (Beat after each one.)
- Blend in pumpkin.
- Add dry ingredients gradually.
- Stir in raisins and nuts.
- Butter and flour a 1 pound empty coffee can and pour in batter.
- Bake for 1 hour at 350°. Remove cake when cool.
- Sprinkle with confectioners sugar when cool.
