Ingredients

  • 1 1/2 c. vanilla wafer crumbs
  • 1/2 c. finely chopped pecans
  • 5 Tbsp. melted butter
  • 2 c. cottage cheese
  • 2 pkg. (3 3/4 oz.) instant lemon pudding mix
  • 1 3/4 c. milk
  • 2 Tbsp. grated lemon peel
  • 1/2 c. sour cream

Method

  • Combine crumbs, nuts and butter.
  • Press into bottom and sides of 9-inch pie plate.
  • Bake at 350° for 10 minutes; cool thoroughly. Beat cottage cheese on highest speed of electric mixer until smooth.
  • Prepare pudding mix as directed, except use the 1 3/4 cups milk.
  • Stir in cottage cheese and lemon peel.
  • Pour into cooled crust.
  • Top with sour cream.
  • Chill several hours.
