Ingredients
- 1 1/2 c. vanilla wafer crumbs
- 1/2 c. finely chopped pecans
- 5 Tbsp. melted butter
- 2 c. cottage cheese
- 2 pkg. (3 3/4 oz.) instant lemon pudding mix
- 1 3/4 c. milk
- 2 Tbsp. grated lemon peel
- 1/2 c. sour cream
Method
- Combine crumbs, nuts and butter.
- Press into bottom and sides of 9-inch pie plate.
- Bake at 350° for 10 minutes; cool thoroughly. Beat cottage cheese on highest speed of electric mixer until smooth.
- Prepare pudding mix as directed, except use the 1 3/4 cups milk.
- Stir in cottage cheese and lemon peel.
- Pour into cooled crust.
- Top with sour cream.
- Chill several hours.
