Ingredients

  • 3 eggs
  • 1 c. sugar
  • 1 tsp. lemon juice
  • 1 tsp. soda
  • 1/4 tsp. salt
  • 1 tsp. ground ginger
  • 1/2 tsp. ground nutmeg
  • 3/4 c. all-purpose flour
  • 2/3 c. cooked pumpkin or canned
  • 1 c. chopped nuts
  • powdered sugar
  • 1 c. sifted powdered sugar
  • 8 oz. cream cheese, softened
  • 1/4 c. margarine, softened
  • 1 tsp. vanilla
  • 1 tsp. lemon juice

Method

  • Beat eggs on high for 1 minute.
  • Add sugar and 1 teaspoon lemon juice.
  • Beat well.
  • Add soda, salt and spices.
  • Fold in flour and pumpkin.
  • Mix well.
  • Spread batter onto a greased cookie sheet or jelly roll pan.
  • Sprinkle with nuts.
  • Bake at 375° for 20 minutes.
