Ingredients

  • 1 box yellow cake mix
  • 2 (28 oz.) cans pumpkin
  • 4 beaten eggs
  • 8 oz. Pet evaporated milk
  • 1 c. sugar + 3 tsp.
  • 1/2 tsp. ground cloves
  • 1 tsp. ground nutmeg
  • 1/2 tsp. ground ginger
  • 1 1/2 sticks margarine
  • 1 c. pecan pieces
  • Cool Whip

Method

  • Beat eggs.
  • Add sugar and beat.
  • Mix in pumpkin.
  • Add evaporated milk.
  • Add spices.
  • Mix well and pour in greased 9 x 13-inch pan.
  • Sprinkle yellow cake mix over mixture.
  • Melt margarine and pour evenly over cake mix.
  • Add pecans on top.
  • Bake at 350° for 45 minutes.
  • Cool.
  • Cut into squares.
  • Top with Cool Whip.
