Ingredients

  • 2 c. flour
  • 2 tsp. soda
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 c. sugar
  • 2 c. pumpkin
  • 1 c. oil

Method

  • Preheat oven to 325°.
  • Prepare pans for 24 cupcakes.
  • Mix first 5 ingredients in a small bowl.
  • In a large bowl, mix sugar and pumpkin; add oil and mix again.
  • Add flour mixture to large bowl, beating as needed.
  • (Add in 3 pans.)
  • Pour batter into pans. Bake for 25 to 35 minutes or until done.
  • Test with a toothpick.
