Ingredients
- 2 c. flour
- 2 tsp. soda
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 2 c. sugar
- 2 c. pumpkin
- 1 c. oil
Method
- Preheat oven to 325°.
- Prepare pans for 24 cupcakes.
- Mix first 5 ingredients in a small bowl.
- In a large bowl, mix sugar and pumpkin; add oil and mix again.
- Add flour mixture to large bowl, beating as needed.
- (Add in 3 pans.)
- Pour batter into pans. Bake for 25 to 35 minutes or until done.
- Test with a toothpick.
