Ingredients

  • 2 c. sugar
  • 1/2 c. vegetable oil
  • 3 eggs
  • 1 1/2 c. pumpkin
  • 1/2 c. water
  • 1 1/2 c. raisins
  • 1 c. chopped walnuts
  • 3 c. all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. cloves
  • 3/4 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. salt

Method

  • Mix sugar and oil.
  • Add eggs, one at a time, beating well. Mix pumpkin and water; add alternately to mixture with sifted dry ingredients.
  • Mix gently.
  • Stir in raisins and nuts.
  • Spoon batter into greased muffin tins.
  • Bake at 400° for 20 minutes.
  • Makes about 30 muffins.
