Ingredients
- 2 cups cooked pumpkin crushed coarsely
- 1 1/2 cups flour
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 2 eggs
- 1/2 cup whole milk
- 1 tablespoon melted butter
- 1/4 teaspoon vanilla essence
- 3 tablespoons brown sugar
- 1/4 teaspoon cinnamon Powdered
- oil for deep-frying
Method
- Sift flour, baking powder, cinnamon and salt.
- Beat eggs until fluffy
- Add beaten eggs, melted butter, vanilla essence and milk to dry ingredients
- Beat with a fork until smooth
- Stir in crushed pumpkin and add more milk if needed
- Batter should be of a dropping consistency
- Use a tablespoon to drop batter into preheated deep fat
- Fry for 4 - 5 minutes or until golden brown.
