Ingredients

  • 2 cups cooked pumpkin crushed coarsely
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 2 eggs
  • 1/2 cup whole milk
  • 1 tablespoon melted butter
  • 1/4 teaspoon vanilla essence
  • 3 tablespoons brown sugar
  • 1/4 teaspoon cinnamon Powdered
  • oil for deep-frying

Method

  • Sift flour, baking powder, cinnamon and salt.
  • Beat eggs until fluffy
  • Add beaten eggs, melted butter, vanilla essence and milk to dry ingredients
  • Beat with a fork until smooth
  • Stir in crushed pumpkin and add more milk if needed
  • Batter should be of a dropping consistency
  • Use a tablespoon to drop batter into preheated deep fat
  • Fry for 4 - 5 minutes or until golden brown.
