Ingredients
- 3 cups sugar
- 3 1/2 cups flour
- 2 tsp. cinnamon
- 2 tsp. nutmeg
- 1 1/2 tsp. salt
- 2 tsp. baking soda
- 1 cup vegetable oil
- 2/3 cup water
- One 15-ounce can pumpkin puree
- 2 eggs, beaten
- 12 ounces semisweet chocolate chips
Method
- Preheat the oven to 350.
- Lightly grease a two 12-compartment muffin pans (or use paper liners), or grease loaf pans.
- -In a large bowl, combine sugar, flour, spices, salt and baking soda.
- -In a medium bowl, combine the oil, water, eggs and pumpkin puree.
- -Add the liquid mixture to the flour mixture and combine thoroughly. Add chocolate chips and stir to combine.
- -Divide the batter equally in the muffin cups.
- Bake muffins for 40 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before storing.
