Ingredients

  • 3 cups sugar
  • 3 1/2 cups flour
  • 2 tsp. cinnamon
  • 2 tsp. nutmeg
  • 1 1/2 tsp. salt
  • 2 tsp. baking soda
  • 1 cup vegetable oil
  • 2/3 cup water
  • One 15-ounce can pumpkin puree
  • 2 eggs, beaten
  • 12 ounces semisweet chocolate chips

Method

  • Preheat the oven to 350.
  • Lightly grease a two 12-compartment muffin pans (or use paper liners), or grease loaf pans.
  • -In a large bowl, combine sugar, flour, spices, salt and baking soda.
  • -In a medium bowl, combine the oil, water, eggs and pumpkin puree.
  • -Add the liquid mixture to the flour mixture and combine thoroughly. Add chocolate chips and stir to combine.
  • -Divide the batter equally in the muffin cups.
  • Bake muffins for 40 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before storing.
