Ingredients

  • 4 eggs
  • 2 c. sugar
  • 1 c. vegetable oil
  • 2 c. flour
  • 2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground nutmeg
  • 2 c. canned pumpkin

Method

  • Blend together eggs and sugar until light and well blended. Add oil and continue to beat.
  • Sift and stir dry ingredients together and thoroughly beat into egg mixture.
  • Add pumpkin and mix well again.
  • Pour into greased and floured 9-inch tube pan. Bake at 350° for 55 minutes or until done.
  • Let stand in pan for 10 minutes before removing.
